    BBB, nice, just real nice. So many ways to sharpen a kitchen knife via wetstones and your method is one of the best imo for a western based residential food prep diet. Can you go sharper, sure, but it's food we are cutting not paper or hair, etc. I have to mention your eulogy on Cliff Stamp (Phd, Rip) what a beauty that was.......thanks. I've listened to it more than once, it is that good.

    Hey how is it going hope all is well and that your doing good ! I just randomly thought about this channel and was wondering what you been up to then i remembered don't you have a design with spyderco coming up soon or was that just the steel collab ?

  • @thaknobodi

    I deburr on the stones as much as possible, but a letter envelope on a table, or the corner of a hard cardboard box as a strop finishes it nicely.

    • @FearNoSteel
      @FearNoSteel 8 днів тому

      I'm going to keep it real with you. I had the same experience when I was in your position but what I've learned over time with experience is If that's effective then there is still a wire edge and you will need a fine abrasive on that envelope or cardboard to fully remove that straightened out burr for lasting front end sharpness.

      @@FearNoSteel After getting at least one of the great steels (Vanax, ZDP-189, Tungsten Carbide, K390, etc), the just about only thing that I can bring myself to get is your 15V on the PM 2s. It's kind of hard to find something else at that level. I'm looking forward to Spyderco's Rex 121 and the other promised presentations of the 15V.

    I just got my sage Maxamet to replace the one I lost. The factory edge should hold up a while but I will definitely consider sending to you instead of doing it myself. I have about 100 knives that I sharpen myself but I would rather not mess up my Maxamet.

    For my Spyderco manix-2 blurple G-10/ S110V I use my 2" × 6" 300, 600 and 1000 grit DMT diamond plates then I move to ceramic rods to clean it up and apply a keen micro bevel. I get good, long lasting edges but not hair whittling even if I strop afterwards. Any suggestions?

    • @FearNoSteel
      @FearNoSteel 5 днів тому

      Dump all that stuff, get a metallic bonded stone 40/28 um cBN, cut your bevels and deburr, skip the microbevel and use gunny juice 1um diamond emulsion on cowhide leather to strop.

    If you use your knife as a hammer, axe, or prybar, hardness is important. I use mine to cut things, and so relatively soft cast metal rich in hard carbides has the most aggressive cutting edge (it’s like having micro-serrations) and is the easiest to sharpen. EDC knives made of super hard alloys are a pain in the butt.

    Thanks professor. The obvious for educated eyes is lost on most of us and is explained by you very well. For example the difference in hardness from the spine to the edge. Is Scratch testing the preferred method for the edge? Or is there another method that you can recommend?

I have the sk5 version, but am looking for an upgrade. But man, are these knives expensive.. Thanks for this little test, it's very informative 👍 Greets, TW.

Lol I know I’m late to this vid, but might you share what sharpening stone and grit you are using? I saw the company name on the stone’s base, and with some searches, it seems like the Gokumyo , possibly a 15K? Just basing off of coloration that seems to match an ad. Thanks again in advance. Lee
